For the Shrimp
- 1 lb Shrimp, peeled and deveined
- 1 tablespoon Olive oil
- 1 teaspoon Chili powder
- 1 teaspoon Cumin
- 0.5 teaspoon Salt
- 0.5 teaspoon Black pepper
For the Mango Salsa
- 1 Mango, diced
- 1 Red bell pepper, diced
- 0.5 Red onion, diced
- 1 Jalapeno, minced
- 0.25 cup Cilantro, chopped
- 1 tablespoon Lime juice
- 8 Tortillas
1. In a mixing bowl, combine shrimp, olive oil, chili powder, cumin, salt, and black pepper. Mix well.
2. Heat a skillet over medium-high heat. Add shrimp and cook for 2-3 minutes on each side until pink and opaque.
3. In another bowl, combine mango, red bell pepper, red onion, jalapeno, cilantro, and lime juice. Mix well.
4. Warm tortillas in a skillet or microwave.
5. Assemble tacos by placing shrimp on tortillas and topping with mango salsa.
