Mango Lime Cheesecake
A refreshing cheesecake with a tropical twist of mango and lime.

Crust
- 1.5 cups Graham cracker crumbs
- ¼ cup Sugar
- ½ cup Butter, melted
Filling
- 24 oz Cream cheese, softened
- 1 cup Sugar
- 3 Eggs
- 1 teaspoon Vanilla extract
- 1 cup Mango puree
- 2 tablespoon Lime juice
Preheat oven to 325°F (163°C).
Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla, mango puree, and lime juice.
Pour filling over crust. Bake for 60 minutes or until center is set. Let cool, then refrigerate for at least 4 hours.
