Ingredients 

Crust

  • 1.5 cups Graham cracker crumbs
  • ¼ cup Sugar
  • ½ cup Butter, melted

Filling

  • 24 oz Cream cheese, softened
  • 1 cup Sugar
  • 3 Eggs
  • 1 teaspoon Vanilla extract
  • 1 cup Mango puree
  • 2 tablespoon Lime juice

Instructions 

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla, mango puree, and lime juice.
  4. Pour filling over crust. Bake for 60 minutes or until center is set. Let cool, then refrigerate for at least 4 hours.
