  • 1 cup Mango puree fresh or canned
  • 1 cup Coconut milk
  • ¼ cup Sugar
  • 2 tablespoon Cornstarch dissolved in 2 tablespoon water
  • 1 teaspoon Vanilla extract

Instructions 

  1. In a saucepan, combine mango puree, coconut milk, and sugar. Cook over medium heat until the mixture starts to simmer.
  2. Add the cornstarch mixture and whisk continuously until the pudding thickens.
  3. Remove from heat and stir in vanilla extract.
  4. Pour the pudding into serving cups and let it cool to room temperature. Refrigerate for at least 2 hours before serving.
