Ingredients 

Ice Cream

  • 2 cups Heavy Cream
  • 1 cup Coconut Milk
  • 1 cup Mango Puree
  • ½ cup Sugar
  • 1 teaspoon Vanilla Extract

Cookies

  • 16 Graham Crackers or any cookies of your choice

Instructions 

  1. In a mixing bowl, whisk together heavy cream, coconut milk, mango puree, sugar, and vanilla extract until well combined.
  2. Pour the mixture into a baking sheet lined with parchment paper and spread evenly.
  3. Freeze for at least 4 hours or until firm.
  4. Once frozen, cut the ice cream into squares the same size as your cookies.
  5. Sandwich the ice cream squares between two cookies and serve immediately or store in the freezer until ready to eat.
