Cheesecake Filling
- 1 cup Cream Cheese softened
- ½ cup Coconut Cream
- ¼ cup Sugar
- 1 teaspoon Vanilla Extract
Mango Topping
- 1 cup Mango Puree fresh or canned
- 1 tablespoon Lime Juice fresh
- 1 tablespoon Honey
In a mixing bowl, beat the cream cheese until smooth.
Add coconut cream, sugar, and vanilla extract. Mix until well combined.
Divide the cheesecake mixture evenly into serving cups.
In another bowl, mix mango puree, lime juice, and honey.
Top each cheesecake cup with the mango mixture.
Chill in the refrigerator for at least 2 hours before serving.
