Ingredients

  • 2 tablespoon vegetable oil
  • 1 lb chicken breast, cut into cubes
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 cup mango puree
  • 1 cup coconut milk
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon cilantro, chopped (for garnish)

Instructions 

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent.
  3. Add the minced garlic and ginger, cook for another minute.
  4. Add the chicken cubes and cook until browned on all sides.
  5. Stir in the curry powder, turmeric, salt, and pepper.
  6. Add the mango puree and coconut milk, bring to a simmer.
  7. Reduce heat and let it cook for about 20 minutes, until the chicken is cooked through and the sauce has thickened.
  8. Garnish with chopped cilantro before serving.
