- 1 cup Pumpkin puree
- ½ cup Unsweetened cocoa powder
- 1 cup Whole wheat flour
- ½ cup Sugar substitute
- 1 teaspoon Baking powder
- ½ teaspoon Baking soda
- ¼ teaspoon Salt
- 1 teaspoon Vanilla extract
- 2 large Eggs
- ½ cup Unsweetened almond milk
Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
In a large bowl, whisk together the pumpkin puree, eggs, vanilla extract, and almond milk.
In another bowl, mix the whole wheat flour, cocoa powder, sugar substitute, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Divide the batter evenly among the muffin cups.
Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
