Ingredients 

Main Ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 cup shredded cheddar cheese
  • 0.5 cup cooked bacon, crumbled
  • 0.5 cup sour cream
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Wash and dry sweet potatoes. Pierce each with a fork.
  3. Bake sweet potatoes for 45 minutes or until tender.
  4. Let cool slightly, then cut in half lengthwise and scoop out most of the flesh, leaving a thin layer.
  5. Brush skins with olive oil, season with salt and pepper, and bake for another 10 minutes.
  6. Fill each skin with cheese and bacon, then bake until cheese is melted.
  7. Top with sour cream and green onions before serving.
