Main Ingredients
- 1 cup Lentils rinsed
- 1 large Onion chopped
- 2 cloves Garlic minced
- 2 cups Vegetable Broth
- 1 can Diced Tomatoes
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- to taste Salt and Pepper
1. Heat a large pot over medium heat and add a splash of oil.
2. Add the chopped onion and cook until translucent, about 5 minutes.
3. Add the minced garlic and cook for another minute.
4. Stir in the cumin and paprika, cooking for another minute.
5. Add the lentils, vegetable broth, and diced tomatoes. Bring to a boil.
6. Reduce heat to low and simmer for 30-35 minutes, or until lentils are tender.
7. Season with salt and pepper to taste. Serve hot.
