Lentil Spinach Soup Recipe
A hearty and healthy lentil spinach soup.

Main Ingredients
- 1 cup lentils rinsed
- 6 cups vegetable broth
- 1 onion chopped
- 2 cloves garlic minced
- 2 cups spinach fresh, chopped
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 tablespoon olive oil
- to taste salt
- to taste black pepper
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Add rinsed lentils, vegetable broth, cumin, and paprika. Bring to a boil.
Reduce heat and simmer for 20-25 minutes, until lentils are tender.
Add chopped spinach and cook for another 5 minutes.
Season with salt and black pepper to taste. Serve hot.
