Ingredients 

Main Ingredients

  • 1 cup lentils rinsed
  • 6 cups vegetable broth
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 cups spinach fresh, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • to taste salt
  • to taste black pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Add rinsed lentils, vegetable broth, cumin, and paprika. Bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes, until lentils are tender.
  6. Add chopped spinach and cook for another 5 minutes.
  7. Season with salt and black pepper to taste. Serve hot.
