Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 2 medium Carrots chopped
  • 1 stalk Celery chopped
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 4 cups Vegetable Broth
  • 1 can Diced Tomatoes
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onions, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. 3. Stir in the minced garlic, cumin, and paprika. Cook for another minute.
  4. 4. Add the rinsed lentils, vegetable broth, and diced tomatoes. Bring to a boil.
  5. 5. Reduce heat to low, cover, and let simmer for 30-35 minutes, or until lentils are tender.
  6. 6. Season with salt and black pepper to taste. Serve hot.
