Main Ingredients
- 1 cup lentils rinsed and drained
- 1 cup vegetable broth
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 cup carrots diced
- 1 cup peas frozen
- 2 tablespoon tomato paste
- 1 teaspoon thyme dried
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 cups mashed potatoes prepared
Preheat your oven to 375°F (190°C).
In a large pot, combine lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until lentils are tender.
In a separate pan, sauté the onion and garlic until softened. Add carrots and cook for another 5 minutes.
Stir in the cooked lentils, peas, tomato paste, thyme, salt, and pepper. Cook for another 5 minutes.
Transfer the lentil mixture to a baking dish. Spread the mashed potatoes evenly over the top.
Bake in the preheated oven for 20 minutes, or until the top is golden brown.
