Ingredients 

Main Ingredients

  • 1 cup lentils rinsed and drained
  • 1 cup vegetable broth
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup carrots diced
  • 1 cup peas frozen
  • 2 tablespoon tomato paste
  • 1 teaspoon thyme dried
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups mashed potatoes prepared

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, combine lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until lentils are tender.
  3. In a separate pan, sauté the onion and garlic until softened. Add carrots and cook for another 5 minutes.
  4. Stir in the cooked lentils, peas, tomato paste, thyme, salt, and pepper. Cook for another 5 minutes.
  5. Transfer the lentil mixture to a baking dish. Spread the mashed potatoes evenly over the top.
  6. Bake in the preheated oven for 20 minutes, or until the top is golden brown.
