Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed and drained
  • 2 medium Sweet Potatoes peeled and cubed
  • 1 cup Vegetable Broth
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • to taste Salt and Pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a pot, cook the lentils in vegetable broth until tender, about 20 minutes.
  3. In a mixing bowl, toss the sweet potatoes with olive oil, cumin, paprika, salt, and pepper.
  4. Spread the sweet potatoes on a baking dish and roast in the oven for 25-30 minutes until soft.
  5. In a pan, sauté the onion and garlic until translucent.
  6. Combine the cooked lentils, roasted sweet potatoes, and sautéed onions and garlic in the baking dish.
  7. Bake for an additional 10 minutes to meld flavors.
