Lentil and Sausage Soup

Main Ingredients
- 1 cup lentils rinsed
- 4 links sausage sliced
- 1 medium onion chopped
- 2 cloves garlic minced
- 2 cups chicken broth
- 2 cups water
- 1 teaspoon salt to taste
- 1 teaspoon black pepper to taste
- 1 teaspoon thyme dried
- 1 cup carrots chopped
- 1 cup celery chopped
1. In a large pot, cook the sausage over medium heat until browned.
2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
3. Stir in the lentils, chicken broth, water, salt, pepper, and thyme.
4. Bring to a boil, then reduce heat and simmer for 30 minutes.
5. Add the chopped carrots and celery. Simmer for another 15 minutes or until the lentils and vegetables are tender.
6. Adjust seasoning with more salt and pepper if needed. Serve hot.
