  • 1 cup unsalted butter softened
  • ½ cup powdered sugar
  • 2 cups all-purpose flour
  • 1 tablespoon lemon zest
  • 1 teaspoon fresh thyme leaves
  • ¼ teaspoon salt

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, cream together the butter and powdered sugar until light and fluffy.
  3. Add the flour, lemon zest, thyme, and salt. Mix until combined.
  4. Roll the dough into a log and wrap in plastic wrap. Chill for 30 minutes.
  5. Slice the dough into ¼-inch thick rounds and place on a baking sheet.
  6. Bake for 18-20 minutes or until edges are lightly golden.
  7. Cool on a wire rack.
