Instructions
Preheat oven to 350°F (175°C).
In a bowl, cream together the butter and powdered sugar until light and fluffy.
Add the flour, lemon zest, thyme, and salt. Mix until combined.
Roll the dough into a log and wrap in plastic wrap. Chill for 30 minutes.
Slice the dough into ¼-inch thick rounds and place on a baking sheet.
Bake for 18-20 minutes or until edges are lightly golden.
Cool on a wire rack.
