Main Ingredients
- 1 cup All-purpose flour
- ½ cup Butter cold, cubed
- ¼ cup Sugar
- 1 unit Egg beaten
- 1 unit Lemon zest and juice
- ½ cup Heavy cream
- ½ cup Sugar for filling
Preheat oven to 350°F (175°C).
In a mixing bowl, combine flour and sugar. Cut in the butter until the mixture resembles coarse crumbs.
Add the beaten egg and mix until the dough comes together. Press into tartlet pans.
Bake for 10-12 minutes or until golden. Let cool.
In another bowl, whisk together lemon juice, zest, heavy cream, and sugar. Pour into cooled tartlet shells.
Bake for another 10-15 minutes until the filling is set. Cool before serving.
