Ingredients 

Crust

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter cold and cubed
  • ¼ cup granulated sugar
  • 1 egg yolk
  • 2 tablespoon cold water

Filling

  • 1 cup granulated sugar
  • 3 eggs
  • ½ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • ½ cup heavy cream

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and sugar. Cut in butter until mixture resembles coarse crumbs. Add egg yolk and cold water, mix until dough forms. Press dough into tart pan.
  3. Bake crust for 15 minutes. Remove from oven and let cool.
  4. In another bowl, whisk together sugar, eggs, lemon juice, and lemon zest. Stir in heavy cream. Pour filling into cooled crust.
  5. Bake for 15-20 minutes, or until filling is set. Let cool before serving.
