- 1 sheet Puff pastry thawed if frozen
- ½ cup Granulated sugar
- 1 tablespoon Lemon zest freshly grated
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a small bowl, mix the granulated sugar and lemon zest until well combined.
Sprinkle half of the lemon sugar mixture onto a clean surface. Place the puff pastry sheet on top and roll it out slightly to press the sugar into the dough.
Sprinkle the remaining lemon sugar on top of the puff pastry. Fold the long sides of the pastry towards the center, meeting in the middle. Fold one half over the other, creating a log.
Using a sharp knife, cut the log into ¼-inch slices. Place the slices cut-side up on the prepared baking sheet, spacing them about 2 inches apart.
Bake for 12-15 minutes, or until the palmiers are golden and crispy. Allow them to cool on a wire rack before serving.
