Lemon Strawberry Crumb Bars

Crust and Topping
- 1 cup unsalted butter melted
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
Filling
- 2 cups strawberries diced
- 1 tablespoon lemon juice freshly squeezed
- 1 teaspoon lemon zest grated
- ½ cup granulated sugar
- 2 tablespoon cornstarch
Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
In a mixing bowl, combine melted butter, sugar, and vanilla extract. Add flour, baking powder, and salt. Mix until crumbly.
Press half of the crumb mixture into the prepared baking dish to form the crust.
In another bowl, mix strawberries, lemon juice, lemon zest, sugar, and cornstarch. Spread over the crust.
Sprinkle the remaining crumb mixture over the strawberry layer.
Bake for 35 minutes or until the top is golden brown. Let cool before cutting into bars.
