Ingredients

  • 2 tablespoons Butter softened
  • 3 Eggs separated
  • 1 cup Milk
  • cup Lemon juice freshly squeezed
  • 1 tablespoon Lemon zest grated
  • ¼ cup All-purpose flour
  • ¼ teaspoon Salt

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the sugar and butter until light and fluffy.
  3. Add the egg yolks one at a time, beating well after each addition.
  4. Stir in the flour and salt, then gradually add the milk, lemon juice, and lemon zest. Mix until smooth.
  5. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the lemon mixture.
  6. Pour the mixture into a greased pie dish and bake for 45 minutes, or until the top is golden and the center is set.
  7. Let the pie cool completely before serving.
