Ingredients 

Main Ingredients

  • 3 tablespoon Butter melted
  • ¼ cup Flour
  • 1 cup Milk warm
  • 3 Eggs separated
  • ½ cup Sugar
  • 1 tablespoon Lemon Zest
  • ¼ cup Lemon Juice freshly squeezed
  • ¼ teaspoon Salt

Instructions 

  1. Preheat your oven to 375°F (190°C). Butter the ramekins and dust with sugar.
  2. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
  3. Gradually whisk in the warm milk until smooth. Remove from heat and let cool slightly.
  4. In a mixing bowl, beat the egg yolks and sugar until pale and thick. Add the lemon zest and juice, then stir in the milk mixture.
  5. In another bowl, beat the egg whites and salt until stiff peaks form. Gently fold the egg whites into the lemon mixture.
  6. Spoon the mixture into the prepared ramekins. Bake for 12-15 minutes, until puffed and golden.
  7. Serve immediately.
