Ingredients 

Main Ingredients

  • 4 large eggs
  • 100 g caster sugar
  • 100 g self-raising flour
  • 1 lemon (zest)
  • 200 ml double cream
  • 2 tablespoon lemon curd
  • Icing sugar for dusting

Instructions 

  1. Preheat oven to 200°C (180°C fan). Line a baking tray with parchment paper.
  2. Whisk eggs and sugar until thick and pale.
  3. Fold in flour and lemon zest.
  4. Pour into tray, spread evenly. Bake for 10 minutes.
  5. Turn onto sugared parchment, roll up, cool.
  6. Whip cream, fold in lemon curd.
  7. Unroll cake, spread cream mixture, re-roll.
  8. Dust with icing sugar, serve.
