Instructions 

  1. Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Mix in the lemon zest and lemon juice until well combined.
  4. Gradually add the flour, poppy seeds, and salt, mixing until the dough comes together.
  5. Roll the dough into a log about 2 inches in diameter. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  6. Slice the dough into ¼-inch thick rounds and place them on the prepared baking sheet.
  7. Bake for 20-25 minutes, or until the edges are lightly golden. Let cool on a wire rack.
