- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon poppy seeds
- 1 tablespoon lemon zest from 2 lemons
- 1 cup milk
- ½ cup vegetable oil
- 2 large eggs
- 2 teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon vanilla extract
Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
In a large bowl, whisk together the flour, sugar, poppy seeds, lemon zest, baking powder, and salt.
In another bowl, mix the milk, vegetable oil, eggs, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Divide the batter evenly among the muffin cups, filling each about ⅔ full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
