Lemon Poppy Seed Madeleines

- 1 cup all-purpose flour
- ½ cup granulated sugar
- ¼ cup unsalted butter, melted
- 2 large eggs
- 1 tablespoon lemon zest
- 1 tablespoon poppy seeds
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
Preheat oven to 375°F (190°C). Grease a madeleine pan.
In a bowl, whisk together flour, baking powder, and salt.
In another bowl, beat eggs and sugar until pale and thick.
Add melted butter, lemon zest, and vanilla extract to the egg mixture. Mix well.
Fold in the dry ingredients and poppy seeds until just combined.
Spoon batter into the prepared madeleine pan.
Bake for 10 minutes or until edges are golden brown.
Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
