- 2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 large eggs
- 1 tablespoon lemon zest
- 1 tablespoon poppy seeds
- 1 teaspoon vanilla extract
Preheat your oven to 350°F (175°C).
In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
In another bowl, beat the eggs, then add lemon zest, poppy seeds, and vanilla extract.
Combine the wet and dry ingredients until a dough forms.
Shape the dough into a log and place it on a baking sheet.
Bake for 25 minutes, then let it cool for 10 minutes.
Slice the log into ½-inch thick slices and bake for another 15 minutes.
Let the biscotti cool completely before serving.
