Ingredients 

Cupcakes

  • 1.5 cups all-purpose flour
  • 1 cup sugar
  • 0.5 cup unsalted butter softened
  • 2 large eggs
  • 2 tablespoon lemon zest
  • 1 teaspoon dried lavender
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup milk

Instructions 

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Stir in the lemon zest and dried lavender.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Add the dry ingredients to the butter mixture alternately with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  7. Divide the batter evenly among the cupcake liners.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cupcakes cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
