Ingredients 

Main Ingredients

  • 2 pieces Chicken Breasts boneless, skinless
  • 1 cup Mixed Greens
  • 1 cup Cherry Tomatoes halved
  • ¼ cup Red Onion sliced

Dressing Ingredients

  • ¼ cup Olive Oil
  • 2 tablespoons Lemon Juice freshly squeezed
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Honey
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • to taste Salt and Pepper

Instructions 

  1. 1. Season the chicken breasts with salt and pepper.
  2. 2. Grill the chicken on a grill pan over medium heat for about 7-8 minutes on each side, or until fully cooked.
  3. 3. Let the chicken rest for 5 minutes, then slice it into strips.
  4. 4. In a mixing bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, dried oregano, dried basil, salt, and pepper to make the dressing.
  5. 5. In a large bowl, combine mixed greens, cherry tomatoes, and red onion.
  6. 6. Add the sliced chicken on top of the salad.
  7. 7. Drizzle the dressing over the salad and toss to combine.
  8. 8. Serve immediately.
