Ingredients 

Choux Pastry

  • 1 cup water
  • ½ cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • ¼ teaspoon salt

Lemon Cream Filling

  • 1 cup heavy cream
  • ¼ cup lemon curd
  • 1 tablespoon powdered sugar
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a saucepan, bring water and butter to a boil.
  3. Add flour and salt, stir until mixture forms a ball.
  4. Remove from heat, let cool for 5 minutes.
  5. Beat in eggs one at a time until smooth.
  6. Pipe dough onto baking sheet in 4-inch strips.
  7. Bake for 20-25 minutes until golden brown.
  8. Cool on wire rack.
  9. Whip heavy cream, powdered sugar, and vanilla until stiff peaks form.
  10. Fold in lemon curd.
  11. Slice eclairs, fill with lemon cream, and serve.
