- 1 cup Butter softened
- 1 cup Sugar
- 2 Eggs
- 2 tablespoon Lemon Zest
- 2 tablespoon Lemon Juice freshly squeezed
- 2 cups All-purpose Flour
- 1 teaspoon Baking Powder
- ½ teaspoon Salt
Preheat your oven to 350°F (175°C).
In a mixing bowl, cream together the butter and sugar until light and fluffy.
Beat in the eggs, one at a time, then stir in the lemon zest and lemon juice.
Combine the flour, baking powder, and salt; gradually blend into the creamed mixture.
Drop dough by teaspoonfuls onto ungreased baking sheets.
Bake for 8 to 10 minutes in the preheated oven, or until lightly browned.
Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
