Lemon Chicken With Quinoa Salad

Main Ingredients
- 4 pieces Chicken Breasts boneless, skinless
- 1 cup Quinoa
- 2 cups Chicken Broth
- 1 piece Lemon juiced and zested
- 2 tablespoons Olive Oil
- 1 cup Cherry Tomatoes halved
- 1 cup Cucumber diced
- ¼ cup Red Onion finely chopped
- ¼ cup Fresh Parsley chopped
- to taste Salt and Pepper
1. Cook the quinoa in chicken broth according to package instructions. Set aside to cool.
2. Season the chicken breasts with salt, pepper, and lemon zest.
3. Heat olive oil in a skillet over medium heat. Cook the chicken until golden brown and cooked through, about 6-7 minutes per side.
4. In a mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, and parsley. Drizzle with lemon juice and olive oil. Season with salt and pepper to taste.
5. Serve the lemon chicken over the quinoa salad.
