Ingredients 

Crust

  • 1.5 cups Graham cracker crumbs
  • 0.5 cup Melted butter
  • 0.25 cup Sugar

Filling

  • 16 oz Cream cheese softened
  • 1 cup Sugar
  • 3 Eggs
  • 0.5 cup Sour cream
  • 0.25 cup Lemon juice freshly squeezed
  • 1 tablespoon Lemon zest
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat oven to 325°F (165°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar. Press into the bottom of a baking pan.
  3. Bake crust for 10 minutes. Remove and let cool.
  4. In another bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, beating well after each addition.
  5. Mix in sour cream, lemon juice, lemon zest, and vanilla extract until well combined.
  6. Pour filling over the cooled crust. Bake for 25 minutes or until set.
  7. Let cool to room temperature, then refrigerate for at least 2 hours before serving.
