Ingredients 

Whoopie Pies

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • ½ cup buttermilk
  • 1 cup fresh blueberries

Filling

  • ½ cup unsalted butter, softened
  • 1 ½ cups powdered sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, beat butter and sugar until light and fluffy. Add egg, vanilla, and lemon zest, and mix well.
  4. Gradually add dry ingredients to wet ingredients, alternating with buttermilk. Fold in blueberries.
  5. Scoop batter onto prepared baking sheet, spacing evenly. Bake for 10 minutes or until edges are lightly golden. Cool completely.
  6. For the filling, beat butter until creamy. Gradually add powdered sugar, lemon juice, and vanilla extract. Beat until smooth.
  7. Spread filling on the flat side of one cookie and top with another cookie. Repeat with remaining cookies.
