Ingredients 

Crust

  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter cold, cubed
  • 0.25 cup sugar
  • 1 egg yolk
  • 2 tablespoon cold water

Filling

  • 1 cup sugar
  • 3 eggs
  • 1 tablespoon lemon zest finely grated
  • 0.5 cup lemon juice freshly squeezed
  • 0.5 cup heavy cream
  • 1 cup blueberries fresh

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and sugar. Cut in butter until mixture resembles coarse crumbs. Add egg yolk and cold water, mix until dough forms. Press into tart pan.
  3. Bake crust for 15 minutes. Let cool.
  4. In another bowl, whisk together sugar, eggs, lemon zest, lemon juice, and heavy cream. Pour into cooled crust.
  5. Bake for 20-25 minutes, until filling is set. Let cool.
  6. Top with fresh blueberries before serving.
