Ingredients 

Main Ingredients

  • 1 cup Blueberries fresh or frozen
  • ½ cup Sugar
  • 1 tablespoon Lemon zest freshly grated
  • 2 tablespoon Lemon juice freshly squeezed
  • 1 tablespoon Cornstarch
  • 1 package Pie crust store-bought or homemade

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine blueberries, sugar, lemon zest, lemon juice, and cornstarch. Mix well.
  3. Roll out the pie crust and cut into circles to fit your muffin tin. Press the crust into the muffin tin cups.
  4. Spoon the blueberry mixture into each pie crust.
  5. Bake for 20-25 minutes or until the crust is golden brown and the filling is bubbly.
  6. Let the pies cool before serving.
