Ingredients 

Crust

  • 1.5 cups Graham Cracker Crumbs
  • 0.5 cups Melted Butter

Filling

  • 16 oz Cream Cheese softened
  • 0.75 cups Sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • 2 tablespoon Lemon Juice
  • 1 tablespoon Lemon Zest
  • 1 cup Blueberries

Instructions 

  1. Preheat oven to 325°F (163°C). Line a 9x9 inch baking pan with parchment paper.
  2. Mix graham cracker crumbs and melted butter in a bowl. Press into the bottom of the prepared pan.
  3. In a large bowl, beat the cream cheese and sugar until smooth. Add eggs, one at a time, beating well after each addition. Stir in vanilla, lemon juice, and lemon zest.
  4. Gently fold in blueberries. Pour the filling over the crust.
  5. Bake for 45 minutes, or until the center is set. Cool completely in the pan on a wire rack. Refrigerate for at least 2 hours before cutting into bars.
