Lemon Blueberry Bars Recipe

Base
- 1.5 cups all-purpose flour
- 0.5 cup sugar
- 0.5 cup unsalted butter, melted
Filling
- 2 large eggs
- 1 cup sugar
- 1 tablespoon lemon zest
- 0.5 cup lemon juice
- 0.5 cup all-purpose flour
- 1 cup fresh blueberries
Preheat oven to 350°F (175°C).
In a mixing bowl, combine flour and sugar for the base. Add melted butter and mix until crumbly. Press into a baking dish.
Bake the base for 15 minutes or until lightly golden. Remove from oven and let cool.
In another bowl, whisk together eggs, sugar, lemon zest, lemon juice, and flour for the filling. Fold in blueberries.
Pour the filling over the cooled base. Bake for another 25 minutes or until set.
Let the bars cool completely before cutting into squares.
