Leftover Mashed Potato Pancakes
Great way to use up leftover mashed potatoes. Crispy on the outside, soft on the inside.

Main Ingredients
- 2 cups leftover mashed potatoes
- 1 egg beaten
- ¼ cup flour
- ¼ cup chopped green onions
- ½ cup shredded cheese optional
- to taste salt and pepper
- 2 tablespoon vegetable oil for frying
In a mixing bowl, combine mashed potatoes, beaten egg, flour, green onions, cheese (if using), salt, and pepper.
Heat oil in a skillet over medium heat.
Scoop about ¼ cup of the potato mixture and form it into a patty. Place it in the hot skillet.
Cook until golden brown, about 3-4 minutes per side. Repeat with remaining mixture.
Serve hot, with sour cream or applesauce if desired.
