Ingredients 

Main Ingredients

  • 2 cups leftover mashed potatoes
  • 1 egg beaten
  • ¼ cup flour
  • ¼ cup chopped green onions
  • ½ cup shredded cheese optional
  • to taste salt and pepper
  • 2 tablespoon vegetable oil for frying

Instructions 

  1. In a mixing bowl, combine mashed potatoes, beaten egg, flour, green onions, cheese (if using), salt, and pepper.
  2. Heat oil in a skillet over medium heat.
  3. Scoop about ¼ cup of the potato mixture and form it into a patty. Place it in the hot skillet.
  4. Cook until golden brown, about 3-4 minutes per side. Repeat with remaining mixture.
  5. Serve hot, with sour cream or applesauce if desired.
