Ingredients 

Crust

  • 1 ½ cups All-purpose flour
  • ¼ cup Sugar
  • ½ cup Butter cold and cubed
  • 1 tablespoon Dried lavender ground
  • 1 Egg yolk
  • 2 tablespoon Ice water

Filling

  • 1 cup Sugar
  • 3 Eggs
  • ½ cup Lemon juice freshly squeezed
  • 2 tablespoon Lemon zest
  • ½ cup Heavy cream

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, and ground lavender. Add cold butter and mix until crumbly.
  3. Add egg yolk and ice water. Mix until dough forms. Press into tart pan.
  4. Bake crust for 15 minutes. Let cool.
  5. For the filling, whisk together sugar, eggs, lemon juice, lemon zest, and heavy cream.
  6. Pour filling into cooled crust. Bake for 15 minutes or until set.
  7. Let tart cool before serving.
