Lavender Honey Ice Cream
This is a delightful and aromatic ice cream made with lavender and honey.

Main Ingredients
- 2 cups heavy cream
- 1 cup whole milk
- ½ cup honey
- 2 tablespoon culinary lavender
- 5 large egg yolks
- 1 teaspoon vanilla extract
1. In a saucepan, combine the heavy cream, whole milk, and culinary lavender. Heat until just simmering, then remove from heat and let steep for 15 minutes.
2. In a mixing bowl, whisk together the egg yolks and honey until well combined.
3. Strain the lavender-infused cream mixture to remove the lavender buds. Slowly add the cream mixture to the egg yolk mixture, whisking constantly.
4. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
5. Remove from heat and stir in the vanilla extract. Let the mixture cool completely.
6. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
7. Transfer the ice cream to a container and freeze until firm, about 4 hours.
