Ingredients 

Main Ingredients

  • 1 kg Lamb shoulder, cut into chunks
  • 2 tablespoon Olive oil
  • 1 Large onion, chopped
  • 3 cloves Garlic, minced
  • 2 cups Carrots, sliced
  • 2 cups Potatoes, diced
  • 4 cups Beef broth
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the lamb chunks and brown them on all sides.
  3. 3. Remove the lamb and set aside.
  4. 4. In the same pot, add the onion and garlic, and sauté until softened.
  5. 5. Return the lamb to the pot and add the carrots, potatoes, beef broth, thyme, salt, and pepper.
  6. 6. Bring to a boil, then reduce the heat and let it simmer for about 2 hours, or until the lamb is tender.
  7. 7. Serve hot and enjoy!
