Ingredients 

Crust

  • 1 ½ cups Graham cracker crumbs
  • ¼ cup Sugar
  • ½ cup Butter, melted

Filling

  • 24 oz Cream cheese, softened
  • 1 cup Sugar
  • 3 large Eggs
  • ½ cup Sour cream
  • ½ cup Key lime juice
  • 1 tablespoon Key lime zest

Instructions 

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press mixture into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition.
  4. Mix in sour cream, key lime juice, and key lime zest until well combined.
  5. Pour filling over crust in the springform pan.
  6. Bake for 60 minutes or until the center is set. Let cool to room temperature, then refrigerate for at least 4 hours before serving.
