Ingredients 

Pasta Salad

  • 8 oz pasta any short pasta
  • 2 cups kale chopped
  • 0.5 cup olive oil
  • 0.25 cup parmesan cheese grated
  • 2 cloves garlic
  • 0.25 cup pine nuts toasted
  • 1 tablespoon lemon juice freshly squeezed
  • salt and pepper to taste

Instructions 

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a blender, combine kale, olive oil, parmesan cheese, garlic, pine nuts, and lemon juice. Blend until smooth. Season with salt and pepper to taste.
  3. Toss the cooked pasta with the kale pesto until well coated.
  4. Serve immediately or chill in the refrigerator for later.
