Jian Bing Chinese Crepes Recipe

Crepe Batter
- ½ cup all-purpose flour
- ¼ cup water
- ¼ cup milk
- 1 egg
- ¼ teaspoon salt
Filling
- 2 eggs beaten
- 2 tablespoon hoisin sauce
- ¼ cup scallions chopped
- ¼ cup cilantro chopped
1. In a mixing bowl, combine flour, water, milk, egg, and salt to make the batter. Mix until smooth.
2. Heat a non-stick pan over medium heat. Pour a thin layer of batter and spread evenly.
3. Crack an egg onto the crepe, spread it out, and let it cook until set.
4. Flip the crepe, spread hoisin sauce, and sprinkle with scallions and cilantro.
5. Fold the crepe and serve hot.
