  • 1 cup All-purpose flour
  • 1 tablespoon Baking powder
  • 1 teaspoon Salt
  • 1 cup Milk
  • ¼ cup Vegetable oil
  • 2 Eggs beaten
  • 1 cup Cheddar cheese shredded
  • 2 Jalapeños diced

Instructions 

  1. Preheat your oven to 400°F (200°C). Grease a baking dish.
  2. In a mixing bowl, combine cornmeal, flour, baking powder, and salt.
  3. In another bowl, mix milk, vegetable oil, and beaten eggs.
  4. Combine the wet and dry ingredients, then fold in the cheddar cheese and diced jalapeños.
  5. Pour the batter into the prepared baking dish and bake for 25 minutes, or until golden brown.
  6. Let it cool slightly before serving.
