Italian Rice Pie

- 1 cup rice uncooked
- 4 cups milk
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 cup ricotta cheese
- 3 eggs beaten
- 1 teaspoon cinnamon
Preheat your oven to 350°F (175°C).
In a saucepan, cook the rice in milk until tender and the milk is absorbed. Let it cool.
In a mixing bowl, combine the cooked rice, sugar, vanilla extract, ricotta cheese, beaten eggs, and cinnamon.
Pour the mixture into a greased pie dish.
Bake for about 60 minutes or until the pie is set and golden brown on top.
Let it cool before serving.
