  • 1 cup rice uncooked
  • 4 cups milk
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup ricotta cheese
  • 3 eggs beaten
  • 1 teaspoon cinnamon

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, cook the rice in milk until tender and the milk is absorbed. Let it cool.
  3. In a mixing bowl, combine the cooked rice, sugar, vanilla extract, ricotta cheese, beaten eggs, and cinnamon.
  4. Pour the mixture into a greased pie dish.
  5. Bake for about 60 minutes or until the pie is set and golden brown on top.
  6. Let it cool before serving.
