Ingredients 

Shells

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon
  • 1 pinch salt
  • 2 tablespoon unsalted butter cut into small pieces
  • 1 egg large egg beaten
  • ½ cup marsala wine or red wine
  • 1 tablespoon distilled white vinegar
  • 1 tablespoon water as needed

Filling

  • 2 cups ricotta cheese drained
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup mini chocolate chips
  • 1 teaspoon orange zest optional

Instructions 

  1. In a mixing bowl, combine flour, sugar, cinnamon, and salt.
  2. Cut in butter until mixture resembles coarse crumbs.
  3. Add egg, marsala wine, vinegar, and water. Mix until dough forms.
  4. Knead dough on a floured surface until smooth. Wrap in plastic and let rest for 30 minutes.
  5. Roll dough out thin and cut into circles. Wrap around cannoli tubes and seal edges.
  6. Fry in hot oil until golden brown. Remove and drain on paper towels.
  7. In a bowl, mix ricotta, powdered sugar, vanilla, chocolate chips, and orange zest.
  8. Fill cooled shells with ricotta mixture. Serve immediately.
