Ingredients 

Crust

  • 1.5 cups Graham cracker crumbs
  • ¼ cup Sugar
  • ½ cup Butter, melted

Filling

  • 24 oz Cream cheese, softened
  • 1 cup Sugar
  • 3 Eggs
  • ¼ cup Irish whiskey
  • ¼ cup Strong brewed coffee, cooled
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition.
  4. Stir in Irish whiskey, coffee, and vanilla extract.
  5. Pour filling over crust. Bake for 60 minutes or until center is set.
  6. Cool on a wire rack, then refrigerate for at least 4 hours before serving.
