Ingredients

  • 2 cups grated raw potatoes
  • 1 cup mashed potatoes
  • 1 cup all-purpose flour
  • 1 cup buttermilk
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons butter for frying

Instructions 

  1. 1. Grate the raw potatoes and squeeze out excess moisture.
  2. 2. In a mixing bowl, combine grated potatoes, mashed potatoes, flour, buttermilk, baking powder, salt, and pepper.
  3. 3. Heat a frying pan over medium heat and melt the butter.
  4. 4. Drop spoonfuls of the potato mixture into the pan and flatten them into pancakes.
  5. 5. Cook until golden brown on both sides, about 3-4 minutes per side.
  6. 6. Serve hot with your favorite toppings.
