Cake Ingredients
- 2 cups All-purpose flour
- 1 cup Granulated sugar
- 1 cup Brown sugar
- 1 teaspoon Baking soda
- 1 teaspoon Ground cinnamon
- ½ teaspoon Salt
- 2 large Eggs
- 1 cup Vegetable oil
- 1 teaspoon Vanilla extract
- 8 oz Crushed pineapple with juice
- 1 cup Chopped pecans
- 2 cups Mashed bananas about 4 ripe bananas
Preheat oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, cinnamon, and salt.
Add the eggs and vegetable oil, and stir just until combined. Stir in the vanilla extract, crushed pineapple with juice, chopped pecans, and mashed bananas.
Divide the batter evenly among the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
